A Taste of Broadway in Ohio

Nestled in the town of Springboro, Ohio is something unexpected – a dinner theater. La Comedia combines Broadway-style productions with fine dining.

Joe Adkins, the theater’s current producer, has been an integral part of La Comedia for over thirty years. Joe’s brother David bought the theatre in 1995, and the Adkin family loves being part of the unique and wonderful La Comedia history.

Sweet Potato Souffle with Pecans

La Comedia’s most famous dish is probably the sweet potato souffle. This is the most-ordered menu item at the Ohio dinner theater. It’s ideal for the holidays or anytime you want to add something extra special for dinner.

This is a delicious dish and just like the recipe that La Comedia shares freely with everyone. And thanks to the viewer who sent in this recipe for La Comedia Sweet Potato Souffle.

If you enjoy southern sweet potato casserole, you’ll also enjoy this recipe. It’s just a bit more complex than your average home-style sweet potato casserole – but still easy to make.

If you’ve never had the chance to see a show at La Comedia, you can still make its beloved sweet potato souffle at home. Your family won’t want to celebrate Thanksgiving or Christmas without it.

It’s absolutely delicious; almost like a dessert. If you don’t want it to be so sweet, I suggest you start with half the sugar and taste as you go. This dish is so tasty that you’ll never have any leftovers! Enjoy!

What’s the Difference Between Sweet Potatoes and Yams?

This is a question that often comes up. The confusion arises because the names sweet potato and yam are commonly used interchangeably. But, in reality, they are two different root vegetables and belong to two different plant families.

The sweet potato is a member of the morning glory family, whereas the yam has the lily as a relative. Yams are larger and sweeter than sweet potatoes and are not as nutritious. Get more information on how to tell sweet potatoes and yams apart and cook each of them properly.

I’ve been making this for the holidays for nearly 40 years and sometimes add leftover carrots. We’ve always preferred ours with much less sugar and began substituting with maple syrup, stevia or very small amounts of Swerve sugar replacement.

I would love to see someone’s take on La Comedia’s salad dressing: Papaya Chutney Dressing. What makes their salads special are the toasted pine nuts, but I could eat this dressing on EVERYTHING.

Yes! I’m dying for the chutney recipe! I went back home and my friend brought a bottle up from them and it is fantastic. From salad dressing to dipping french fries and marinating chicken it! If anyone has a recipe like it, I would love to have it!

This is delicious. Made it last year and am making it again this year. Only thing I’d suggest is start at half the sugar and taste as you go. To me, 1 cup was too sweet.

FAQs

Why is my sweet potato souffle runny? ›

Roasting sweet potatoes in the oven makes them sweeter and lends caramel-like notes from the natural sugars cooking. Don't add more sugar to make up for it—that could make the souffle runny. Just know it's a flavor trade-off you'll be making if you do this.

How do you thicken a sweet potato souffle? ›

A little cornstarch mixed in should thicken it as it cooks. For a normal-family-sized dish, maybe about 1-2 teaspoons of cornstarch sprinkled over the top (to reduce lumps, don't just dump it in) then mixed in.

Can you freeze leftover sweet potato souffle? ›

Store leftover sweet potato soufflé in an airtight container in the fridge for up to three days. Reheat in the microwave or a 350 F oven for 15 minutes, or until warmed through. You can also freeze this dish in an airtight, freezer-safe container for up to 6 months.

How do you make sweet potato casserole not watery? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

Why put egg in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

What helps a soufflé rise? ›

A soufflé is made up of a base (usually white sauce or creme patissiere enriched with egg yolks), a flavor (added to the base) and whipped egg whites gently folded in and baked in the oven. While it's cooking, the air trapped in the egg whites expands, causing it to rise.

What does cream of tartar do in soufflé? ›

We've all watched in horror as a soufflé that we worked so hard on sinks right before our eyes. Adding a small amount of cream of tartar when beating egg whites helps add structure to each little air bubble that you create in the process. This will lower the risk of the whites collapsing when baked.

Can you overcook a soufflé? ›

Underbake and you'll have a soupy mess. Overbake and a once beautifully majestic souffle will collapse.

What is the best way to reheat sweet potato souffle? ›

TO STORE: Sweet potato soufflé may be kept in an airtight container for up to 4 days in the fridge. TO REHEAT: Rewarm leftovers in a baking dish in the oven at 350°F or in the microwave. TO FREEZE: Freeze souffle in an airtight, freezer-safe storage container for up to 3 months.

How long can souffle stay in the fridge? ›

Souffle may be made up ahead and refrigerated as long as 24 hours. Put souffle in cold oven and bake 50 minutes at 325 degrees. It can also be frozen up to 7 days. Allow 50 to 60 minutes to bake frozen at the same temperature.

How do you tell when sweet potato casserole is done? ›

Sprinkle the topping evenly over the sweet potato mixture, then pop it into the oven and let it bake for 40 to 45 minutes. You will know it's done when the topping is lightly browned and the center of your casserole is set and firm.

Why is boiling not good for sweet potatoes? ›

Bake, don't boil

Baking sweet potatoes caramelizes their natural sugars, especially when done whole. It intensifies their flavor and creates a richer taste compared to boiling, which can result in a watered-down, bland flavor.

Why is my sweet potato still hard after baking? ›

The reason they are hard in the middle is cook them longer or on a higher temperature. Soaking will not help soften your sweet potato unless you are putting the potato and water in a pot on the stove and cooking it. If your sweet potato is still hard it's not cooked enough.

Why is my soufflé batter so runny? ›

If you take too long to use the batter, the egg whites will become watery over time. This is why I preheat my pan ahead of time and use all the batter immediately. If the egg whites are not stiff enough, they will cause the batter to fall flat and become watery.

Why is my soufflé runny? ›

The hotter the oven, the more quickly and fully the soufflé will rise, and the faster it will brown and set on the outside. But the soufflé is also more likely to remain runny in the center, since it'd come close to burning on the outside if you were to leave it long enough to cook through to the center.

Is soufflé supposed to be runny? ›

Soufflés are best when they're still slightly runny in the centre. To check if a soufflé is set, gently tap the dish – it should wobble just a little bit. If the centre seems too fluid, cook for a few more minutes.

How do you stabilize a soufflé? ›

If you are a bit nervous about making a souffle, you can help stabilize the egg whites by adding 1/16th of a teaspoon of cream of tartar per egg white or about half a teaspoon of cornstarch to savory souffles or one or two tablespoons of sugar toward the end of beating the whites of a sweet one, even if the recipe ...
